TCU Football Sandwich Cookies

TCU Football Cookie

Football season is back in full swing, and at Reading Friends we love the TCU Horned Frogs!! Something fun to do with your children while you talk about our local team is to make football sandwich cookies.

Start with chocolate or sugar cookie dough (if you want a from-scratch recipe there is one at the end). With clean hands, help your children shape the cookies into football shapes. Bake them as directed by your mix or recipe. Once they are cool enough to handle, take any kind of white frosting and mix in 2 drops of red food coloring and one drop of blue food coloring. Start stirring to see what happens when you mix red and blue together! Use the purple icing to turn your football cookies into TCU football sandwich cookies! Enjoy!

Chocolate Cookie Recipe (from sparkpeople.com)

Ingredients

2 cups flour
1/2 tsp baking soda
1/2 cup butter, softened
1 cup packed brown sugar
1/4 cup sugar
3/4 cup unsweetened baking cocoa
2 large eggs
1 tsp vanilla

Directions

In medium bowl combine flour, baking soda and cocoa powder.

Cream butter and both sugars with electric mixer until light and fluffy. Add eggs, one at a time, mixing well after each addition. Add vanilla and mix again.

Gradually add flour mixture and combine well.

Bake at 350 F for 13-15 minutes.
